Metabolism of Sinapine in Mustard Plants. II. Purification & Some Properties of Sinapine Esterase.

چکیده

Experimental evidence for the presence in mustard seedlings of an esterase that catalyzes the hydrolysis of sinapine into sinapic acid and choline has been presented previously (12). It was felt that further studies on this enzyme might be of some general biochemical interest. A preparation of sinapine esterase purified 20fold has been obtained from white mustard seedlings (Brassica hirta Moench). The specificity, pH optimum, and other properties of the enzyme have been examined and will be discussed in this paper. A spectrophotometric method for following the hydrolysis of sinapine based on the absorption of sinapic acid at 290 mn has been devised and is described.
